I haven't seen any rips for the channels that came out on Wii like Check Mii Out or Everybody Votes, for instance.

Am I not looking hard enough or are there just not any?

There probably aren't since basically nobody cares. However, tools do exist to rip the contents of wad files, and I can't imagine the audio formats used would be anything we haven't already figured out (unless it's sequenced). So I think you have a decent shot if you can just find those tools.

VGMToolbox can unpack Wii WAD files.

I think the formats are different in some way to Wii games, unfortunately.

Here are the MP3s I have for Everybody Votes. They are 128kbps and have some sound artefacts, so I'm fairly certain this is a line recording rather than Nintendo streams converted to MP3. So, not the best quality, but better than nothing.

I can assure you there will always be interest in Nintendo's musical output!
